Tomato Basil White Bean Melts
Crusty bread is topped with garlicky tomato-basil white beans, balsamic, mozzarella, and a little chile heat.

Ingredients
1 can cannellini beans, drained and rinsed
1 cup chopped cherry tomatoes
1/4 cup chopped basil
1 garlic clove, grated
1 tbsp balsamic vinegar
4 slices crusty bread
1 cup shredded mozzarella
1 tbsp olive oil
1/4 tsp red pepper flakes
Kosher salt
Black pepper
Instructions
Step 1
Mash half the cannellini beans with the tomatoes, basil, garlic, balsamic vinegar, olive oil, salt, pepper, and red pepper flakes.
Step 2
Fold in the remaining beans so the topping has texture.
Step 3
Toast the bread lightly so it can hold the topping.
Step 4
Pile the bean mixture onto the bread, cover with mozzarella, and broil until the cheese melts and browns in spots.
Step 5
Let the melts stand for 1 minute before serving so the topping settles.
