Savory Sweet Potato Breakfast Hash

Ingredients

1 tbsp olive oil
1 lb sweet potato, peeled and diced small
1 red bell pepper, diced
1 small yellow onion, diced
1 tsp smoked paprika
1/2 tsp ground cumin
1 garlic clove, minced
3 cups baby spinach
4 eggs
2 scallions, thinly sliced
1 tsp apple cider vinegar
Kosher salt
Black pepper

Instructions

Step 1

Heat the olive oil in a large oven-safe skillet over medium heat. Add the sweet potato, bell pepper, onion, smoked paprika, cumin, and a pinch of salt.

Step 2

Cover and cook, stirring occasionally, until the sweet potato is nearly tender; add the garlic for the last minute so it does not scorch.

Step 3

Stir in the spinach and apple cider vinegar, then cook just until the spinach wilts. Make four shallow wells in the hash.

Step 4

Crack an egg into each well, season lightly, and cover the skillet or transfer it to a 400 F oven until the whites are set and the yolks are cooked to your liking.

Step 5

Top with the scallions and black pepper before serving.
