Whipped Feta Cucumber Dip
1 cup sunflower seeds
1/2 cup oat flour
2 tbsp flax meal
2 tbsp olive oil
1/3 cup water
1 tsp chopped rosemary
1/2 tsp garlic powder
1 tbsp sesame seeds
1/2 tsp kosher salt

Instructions

Step 1

Heat the oven to 325 F and line a baking sheet with parchment.

Step 2

Pulse the sunflower seeds in a food processor until coarsely ground, then mix with the oat flour, flax meal, rosemary, garlic powder, sesame seeds, and salt.

Step 3

Stir in the olive oil and water to form a dough, then let it stand for 5 minutes so the flax hydrates.

Step 4

Roll the dough thin between sheets of parchment and score it into cracker shapes.

Step 5

Bake until crisp, dry, and browned at the edges, then cool completely before breaking apart.
