Ingredients

1 large cauliflower
2 cans cannellini beans, drained and rinsed
2 tbsp olive oil
1/2 tsp smoked paprika
1 lemon
1/4 cup chopped parsley
1 tbsp capers
1 garlic clove, minced
1/2 cup vegetable broth
2 cups baby spinach
Kosher salt
Black pepper

Instructions

Step 1

Heat the oven to 425 F. Slice the cauliflower into thick steaks, brush with 1 tablespoon olive oil, and season with salt, pepper, and smoked paprika.

Step 2

Roast the cauliflower until tender and browned, flipping once halfway through.

Step 3

Warm the remaining olive oil in a skillet with the garlic, then add the beans, vegetable broth, capers, and lemon zest.

Step 4

Mash a small portion of the beans to make the skillet saucy, then fold in the spinach, parsley, and juice of half the lemon.

Step 5

Serve the cauliflower over the beans with the remaining lemon cut into wedges.
