Ingredients

1 1/4 lb pork tenderloin
1 1/2 cups cherries, halved
1 shallot, minced
1 tbsp balsamic vinegar
1 tsp Dijon mustard
1 tsp maple syrup
1/2 cup chicken broth
1 cup wild rice
1 tsp chopped thyme
1 tbsp olive oil
Kosher salt
Black pepper

Instructions

Step 1

Cook the wild rice according to package directions and keep it warm.

Step 2

Season the pork with salt and pepper, sear it in the olive oil, and finish it in a 400 F oven until it reaches 145 F.

Step 3

Transfer the pork to a cutting board and rest it while you make the sauce.

Step 4

Cook the shallot in the skillet until softened, then add the cherries, balsamic vinegar, Dijon, maple syrup, chicken broth, and thyme.

Step 5

Simmer until the cherries soften and the sauce turns glossy, then season to taste.

Step 6

Slice the pork and serve it over the wild rice with the cherry shallot sauce.
