Miso Peanut Soba Salad

Chilled soba noodles, edamame, cucumber, carrots, scallions, cilantro, and sesame are tossed in a creamy miso-peanut dressing.

Ingredients

8 oz soba noodles
1 cup shelled edamame
1 English cucumber, thinly sliced
2 carrots, shredded
3 scallions, sliced
1/2 cup chopped cilantro
1/4 cup creamy peanut butter
2 tbsp white miso
2 tbsp rice vinegar
1 tbsp tamari
1 tbsp maple syrup
1 tbsp sesame oil
1 lime, juiced
2 tbsp sesame seeds
Kosher salt

Instructions

Step 1

Cook the soba noodles according to package directions, adding the edamame during the last 2 minutes.

Step 2

Drain and rinse the noodles and edamame under cold water until cool.

Step 3

Whisk the peanut butter, miso, rice vinegar, tamari, maple syrup, sesame oil, lime juice, and 2 tablespoons water until smooth.

Step 4

Toss the noodles, edamame, cucumber, carrots, scallions, cilantro, and dressing until evenly coated.

Step 5

Season with salt and sprinkle with sesame seeds before serving chilled or at room temperature.
