Ingredients
1 1/4 lb salmon fillets
1 tbsp Dijon mustard
1 tbsp maple syrup
1 garlic clove, grated
12 oz Brussels sprouts, shredded
1 shallot, thinly sliced
1 crisp apple, thinly sliced
1 tbsp apple cider vinegar
1 tbsp olive oil
Kosher salt
Black pepper
Instructions
Step 1
Heat the oven to 425 F. Stir together the Dijon mustard, maple syrup, garlic, and a pinch of salt.
Step 2
Brush the glaze over the salmon and roast until just cooked through and still moist in the center.
Step 3
Meanwhile, cook the shallot and Brussels sprouts in the olive oil with a pinch of salt until just wilted but still bright.
Step 4
Fold the apple into the warm slaw, splash with apple cider vinegar, season with pepper, and serve alongside the salmon.
