Gochujang Tofu Broccoli Udon

Ingredients
14 oz extra firm tofu, pressed and cubed
8 oz udon noodles
3 cups broccoli florets
2 tbsp neutral oil
2 tbsp gochujang
2 tbsp tamari
1 tbsp rice vinegar
1 tbsp maple syrup
1 tsp sesame oil
1 tbsp grated ginger
2 garlic cloves, grated
2 scallions, sliced
Instructions
Step 1
Cook the udon according to package directions and drain.
Step 2
Whisk the gochujang, tamari, rice vinegar, maple syrup, sesame oil, ginger, and garlic.
Step 3
Brown the tofu in neutral oil until crisp on several sides.
Step 4
Add the broccoli and a splash of water, cover, and steam until crisp-tender.
Step 5
Toss in the udon and sauce until glossy, then finish with scallions.
