Coconut Braised Collard Greens
Collard greens braise with coconut milk, ginger, garlic, tamari, lime, and a little chile for a tender vegan side.

Ingredients
1 bunch collard greens, stems removed and sliced
1 small onion, sliced
1 tbsp grated ginger
2 garlic cloves, minced
3/4 cup coconut milk
1/2 cup vegetable broth
1 tbsp tamari
1 lime
1 tbsp olive oil
1/4 tsp red pepper flakes
Kosher salt
Instructions
Step 1
Cook the onion, ginger, garlic, and red pepper flakes in the olive oil with a pinch of salt until softened.
Step 2
Add the collard greens, coconut milk, vegetable broth, and tamari and toss until the greens start to wilt.
Step 3
Cover and braise gently until the collards are tender but still green.
Step 4
Finish with lime juice and adjust the salt before serving.
