Ingredients

4 boneless pork chops
1 tbsp olive oil
1 yellow onion, sliced
1/2 head green cabbage, sliced thin
2 apples, sliced
1/2 cup apple cider
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
1 tsp maple syrup
1 tsp chopped thyme
Kosher salt
Black pepper

Instructions

Step 1

Season the pork chops generously with salt and pepper. Brown them in the olive oil in a large skillet, then transfer them to a plate.

Step 2

Add the onion, cabbage, apples, and thyme to the skillet and cook until the cabbage starts to soften and pick up browned bits.

Step 3

Stir together the apple cider, Dijon mustard, apple cider vinegar, and maple syrup, then pour it into the skillet.

Step 4

Nestle the pork back into the cabbage, cover, and simmer gently until the pork reaches 145 F and the cabbage is tender.

Step 5

Rest the pork for 5 minutes, then spoon the cabbage, apples, and pan juices over the top.
